Ingredients

4 large russet potatoes

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1 cup shredded cheddar cheese

1 cup cooked bacon bits

1/2 cup sour cream

1/4 cup chopped green onions

Optional: 1/2 cup jalapeños, sliced for added heat

Instructions

Prep the Potatoes: Start by washing the russet potatoes thoroughly. Pat them dry, then pierce each potato several times with a fork. This will help steam escape during cooking.

Prepare the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

Cook the Potatoes: Lightly coat each potato with olive oil and sprinkle with salt and pepper. Place them in the air fryer basket and cook for about 35-40 minutes or until they are tender when pierced with a fork. Adjust the time based on the size of your potatoes.

Scoop and Season: Once the potatoes are cooked, carefully remove them from the air fryer and let them cool for a few minutes. Slice each potato in half lengthwise and scoop out a portion of the potato flesh, leaving a bit of potato on the skin. This will create a sturdy shell for filling.

Season the Shells: In a small bowl, mix the garlic powder, onion powder, smoked paprika, and additional salt and pepper. Brush the inside of each potato skin with a little olive oil, then sprinkle the seasoning mixture evenly.

Air Fry the Skins: Place the potato skins back in the air fryer, skin side up, and cook for another 5-7 minutes at 400°F (200°C) until the skins are crispy.

Load Them Up: Remove the skins from the air fryer. Sprinkle a generous amount of shredded cheddar cheese and cooked bacon bits into each skin.

Final Crisping: Return the loaded skins to the air fryer and cook for an additional 3-5 minutes, or until the cheese is melted and bubbly.

Serve and Garnish: Carefully take out the loaded potato skins. Top each with a dollop of sour cream and a sprinkle of chopped green onions. Add jalapeños if you like a spicy kick.

Enjoy: Serve warm, and get ready for game day festivities as you dig into these delicious loaded potato skins!
