For the Shrimp:

1 lb (450g) shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon garlic powder

1/2 teaspoon cumin

Salt and pepper to taste

Juice of 1 lime

For the Slaw:

1 cup red cabbage, finely shredded

1 cup green cabbage, finely shredded

1 medium carrot, grated

1/4 cup fresh cilantro, chopped

1/4 cup mayonnaise

1 tablespoon apple cider vinegar

1 teaspoon honey (or agave syrup)

Salt and pepper to taste

For Assembly:

8 mini corn or flour tortillas

Lime wedges, for serving

Extra cilantro leaves, for garnish

Instructions
 

Prepare the Slaw:

    - In a large bowl, mix the red cabbage, green cabbage, grated carrot, and cilantro.

      - In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper until combined.

        - Pour the dressing over the cabbage mixture and toss until well coated. Set aside.

          Cook the Shrimp:

            - In a medium bowl, toss the shrimp with olive oil, chili powder, garlic powder, cumin, salt, pepper, and lime juice until well coated.

              - Heat a large skillet over medium-high heat. Once hot, add the shrimp and cook for about 2-3 minutes on each side, or until the shrimp are pink and cooked through.

                Warm the Tortillas:

                  - While the shrimp are cooking, heat the tortillas in a separate dry skillet or microwave for about 30 seconds, until warm and pliable.

                    Assemble the Tacos:

                      - On each tortilla, place a generous spoonful of the slaw, followed by a few shrimp.

                        - Garnish with extra cilantro leaves and serve immediately with lime wedges on the side.
