30-Minute Cheesy Spinach and Mushroom Quesadillas

1 tablespoon olive oil

1 cup mushrooms, sliced

2 cups fresh spinach, packed

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

4 large flour tortillas

2 cups shredded mozzarella cheese (or a Mexican cheese blend)

½ cup queso fresco or feta cheese, crumbled (optional)

Salsa and sour cream for serving

Instructions
 

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and cook for about 4-5 minutes, until they are tender and slightly browned. Stir in the fresh spinach, garlic powder, onion powder, salt, and pepper. Cook for an additional 2-3 minutes, until the spinach is wilted and all ingredients are well combined. Remove from heat and set aside.

    Assemble the Quesadillas: Lay out two of the flour tortillas on a clean surface. Evenly distribute half of the sautéed mushroom and spinach mixture onto each tortilla. Sprinkle 1 cup of shredded mozzarella cheese over the vegetables on each tortilla. If using, add crumbled queso fresco or feta cheese on top for added flavor. Top with the remaining two tortillas.

      Cook the Quesadillas: Wipe down the skillet and return it to medium heat. Carefully place the first quesadilla in the skillet. Cook for about 3-4 minutes on each side, or until the tortillas are golden brown and the cheese is melted. Repeat with the second quesadilla, adding more olive oil to the skillet if necessary.

        Serve: Once cooked, cut the quesadillas into wedges using a pizza cutter or a sharp knife. Serve hot with salsa and sour cream on the side for dipping.
