Ingredients

1 cup Arborio rice

2 cups chicken broth (low-sodium)

1 cup water

1 tablespoon olive oil

1 medium onion, finely chopped

2 garlic cloves, minced

1 cup sliced mushrooms (e.g., cremini, button, or shiitake)

1 cup cooked chicken, shredded or diced

½ cup white wine (optional, but recommended)

½ cup grated Parmesan cheese

½ cup heavy cream

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Broth: In a medium saucepan, combine the chicken broth and water. Heat over low-medium heat to warm it up; keep it on the stove simmering gently.

Sauté the Vegetables: In a large pan or skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 2-3 minutes until translucent. Add the garlic and sliced mushrooms, cooking for another 4-5 minutes until the mushrooms are tender and release their moisture.

Toast the Rice: Stir in the Arborio rice with the mushrooms and onions for about 1-2 minutes. Make sure to coat the rice with the oil and let it toast slightly, which helps develop its flavor.

Deglaze with Wine: If you're using white wine, pour it into the pan and stir until it's mostly absorbed by the rice. This step adds a rich layer of flavor to your risotto.

Add Broth Gradually: Start adding the warm chicken broth mixture, one ladle at a time, stirring frequently. Allow each addition to be absorbed by the rice before adding the next. This should take about 18-20 minutes. The rice will become creamy and tender but still have a slight bite to it (al dente).

Incorporate Chicken and Cream: Once the rice reaches the desired texture, add the cooked chicken, heavy cream, and grated Parmesan cheese. Stir well until the cheese melts and everything is blended together. If it’s too thick, you can add a bit more broth or water to reach your desired consistency.

Season and Serve: Season with salt and pepper to taste. Remove from heat and let it sit for 2-3 minutes for the flavors to meld. Serve hot, garnished with freshly chopped parsley.
