1 lb (450g) shrimp, peeled and deveined

1 cup jasmine rice

2 cups chicken or vegetable broth

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon paprika

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

Juice of 1 lemon

2 green onions, sliced

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Rice: In a medium saucepan, combine the jasmine rice and chicken or vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and liquid is absorbed. Set aside.

    Prepare the Shrimp: While the rice is cooking, heat olive oil in a large skillet over medium heat. Once hot, add the shrimp to the skillet and season with paprika, red pepper flakes, salt, and pepper. Cook for about 2-3 minutes on each side until the shrimp are pink and cooked through. Remove the shrimp from the skillet and set aside.

      Make the Garlic Butter: In the same skillet, lower the heat to medium-low, add the butter and let it melt. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn the garlic.

        Combine: Return the shrimp to the skillet and pour in the lemon juice. Toss to coat the shrimp in the garlic butter sauce. Cook for an additional minute to warm the shrimp through.
