1 lb large shrimp, peeled and deveined

2 tbsp honey

3 tbsp soy sauce (low sodium preferred)

3 cloves garlic, minced

1 tbsp olive oil

1 tsp sesame oil (optional)

2 cups cooked brown rice or quinoa

1 cup broccoli florets (steamed)

1 cup snap peas, trimmed

1 carrot, julienned

2 green onions, sliced

1 tbsp sesame seeds (for garnish)

Salt and pepper, to taste

Prepare the Shrimp Marinade: In a small bowl, whisk together honey, soy sauce, minced garlic, salt, and pepper. Reserve 2 tablespoons for later.

    Marinate the Shrimp: In a large bowl, add the shrimp and pour the remaining marinade over them. Let sit for about 10 minutes to soak up the flavors.

      Cook the Shrimp: Heat olive oil in a large skillet over medium-high heat. Once hot, add the marinated shrimp (discard unused marinade). Cook for about 2-3 minutes on each side, or until the shrimp turn pink and opaque. Remove from heat.

        Prepare the Vegetables: In the same skillet, add steamed broccoli, snap peas, and julienned carrots. Drizzle with sesame oil (if using) and toss sautéing for an additional 3-4 minutes or until heated through.

          Assemble the Bowls: Spoon the cooked brown rice or quinoa into bowls, top with the sautéed vegetables, and then add the honey garlic shrimp on top. Drizzle with the reserved marinade for extra flavor.
