Ingredients
  

1 lb (450g) large shrimp, peeled and deveined

2 cups broccoli florets

4 cloves garlic, minced

1 lemon (zest and juice)

3 tablespoons olive oil

1 teaspoon red pepper flakes (optional for heat)

Salt and pepper to taste

Cooked rice or quinoa for serving (optional)

Fresh parsley, chopped, for garnish

Instructions
 

Prep the Broccoli:

    - Bring a pot of salted water to a boil. Add the broccoli florets and cook for 2-3 minutes until bright green and slightly tender. Drain and set aside.

      Cook the Shrimp:

        - In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the minced garlic and red pepper flakes (if using). Sauté for about 30 seconds until fragrant.

          - Add the shrimp to the skillet and season with salt and pepper. Cook for 2-3 minutes on each side until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

            Combine Ingredients:

              - In the same skillet, add another tablespoon of olive oil. Toss in the blanched broccoli and lemon zest, and sauté for another 2 minutes.

                - Squeeze the lemon juice over the shrimp and broccoli mixture, stirring to combine.

                  Serve:

                    - Return the shrimp to the skillet and heat everything through for another minute. Taste and adjust seasoning as needed.

                      - Serve hot over cooked rice or quinoa if desired, and garnish with chopped parsley.
