2 cups cooked jasmine rice (preferably day-old for best texture)

1 pound medium shrimp, peeled and deveined

1 cup mixed vegetables (carrots, peas, bell peppers, and corn)

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

2 tablespoons vegetable oil (or sesame oil for added flavor)

2 cloves garlic, minced

2 green onions, chopped

2 large eggs, beaten

Salt and pepper, to taste

Prepare the rice: If you don’t have leftover rice, cook the jasmine rice according to package instructions. Spread it out on a baking sheet to cool quickly and prevent clumping.

    Cook the shrimp: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for about 3-4 minutes, or until they turn pink and opaque. Season with a pinch of salt and pepper. Remove the shrimp from the skillet and set aside.

      Sauté vegetables: In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and stir-fry for about 30 seconds until fragrant. Then add the mixed vegetables and stir-fry for 2-3 minutes until they are tender but still crisp.

        Scramble the eggs: Push the vegetables to one side of the pan and pour the beaten eggs into the empty side. Scramble the eggs gently until fully cooked, then mix them into the vegetables.

          Combine ingredients: Add the cooked rice and shrimp back into the skillet. Pour in the soy sauce and oyster sauce (if using). Stir everything together, making sure the rice gets coated evenly with the sauces. Cook for an additional 2-3 minutes, allowing the flavors to meld.

            Finish and serve: Stir in the chopped green onions, taste, and adjust seasoning with more salt and pepper if needed. Serve hot and enjoy your colorful shrimp fried rice!
