2 medium chicken breasts, sliced into thin strips

2 tablespoons olive oil

2 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

8 oz fettuccine pasta (or any pasta of your choice)

3 cups fresh spinach leaves

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the remainder and set aside.

    Sauté the Chicken: In a large skillet, heat olive oil over medium-high heat. Season the sliced chicken breasts with salt, pepper, and Italian seasoning. Add the chicken to the skillet and sauté for about 5-7 minutes or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Create the Sauce: In the same skillet, reduce the heat to medium, and add the minced garlic. Sauté for about 30 seconds until fragrant, being careful not to burn it. Pour in the heavy cream and bring it to a gentle simmer.

        Add Cheese: Gradually stir in the grated Parmesan cheese, mixing until the cheese has melted and the sauce becomes creamy. If the sauce is too thick, add a splash of the reserved pasta water until you reach your desired consistency.

          Incorporate Spinach: Add the fresh spinach to the skillet, stirring until wilted, which should take about 2 minutes. Then, return the cooked chicken to the skillet.

            Combine Pasta and Sauce: Add the cooked fettuccine into the skillet, tossing everything together to ensure the pasta is fully coated in the creamy sauce. Warm through for about 1-2 minutes.
