2 medium sweet potatoes

1 cup rolled oats

1/2 cup almond butter (or peanut butter)

1/4 cup honey (or maple syrup for a vegan option)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Prepare the Sweet Potatoes: Wash and peel the sweet potatoes. Cut them into chunks and place them in a pot of boiling water. Cook for about 15-20 minutes or until tender. Drain and let them cool slightly.

      Mash the Sweet Potatoes: In a large mixing bowl, add the cooked sweet potatoes and mash them with a fork or potato masher until smooth.

        Combine Ingredients: To the mashed sweet potatoes, add the rolled oats, almond butter, honey (or maple syrup), and cinnamon. Mix well until everything is combined into a thick batter.
