Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or chickpea flour for gluten-free)

1 cup non-dairy milk (such as almond or soy milk)

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup buffalo sauce (adjust to taste)

2 tablespoons olive oil or cooking spray

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Cauliflower: Rinse the cauliflower head under cold water and cut it into bite-sized florets. Make sure they're uniform in size for even cooking.

Make the Batter: In a large mixing bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Gradually add the non-dairy milk to the mixture, stirring until a smooth batter forms.

Coat the Cauliflower: Dip each cauliflower floret into the batter, allowing excess batter to drip off. Ensure that each piece is well coated.

Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

Air Fry the Cauliflower: Place the battered cauliflower florets in a single layer in the air fryer basket. Lightly spray or drizzle olive oil over the cauliflower. Cook for 12-15 minutes, shaking the basket halfway through to ensure even cooking.

Toss in Buffalo Sauce: Once the cauliflower is crispy and golden, transfer it to a large bowl and drizzle the buffalo sauce over the florets. Toss gently to coat them evenly with the sauce.

Final Air Fry: Return the cauliflower to the air fryer basket and cook for an additional 3-5 minutes to allow the buffalo sauce to caramelize slightly.

Serve: Remove from the air fryer and transfer to a serving plate. Garnish with fresh chopped parsley for a pop of color and serve with celery sticks or a cooling vegan ranch dip.
