1 medium head of cauliflower, cut into florets

1 cup all-purpose flour (or gluten-free flour)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for spice level)

1 cup plant-based milk (or regular milk)

1 cup buffalo sauce (store-bought or homemade)

2 tablespoons olive oil (optional)

Fresh parsley, chopped (for garnish)

Optional: celery sticks and blue cheese dressing for serving

Instructions
 

Prepare the Cauliflower: Start by washing and cutting the cauliflower into bite-sized florets. Pat them dry with a paper towel to remove excess moisture.

    Make the Batter: In a large bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, and a pinch of salt. Gradually add the plant-based milk, stirring until you have a smooth batter. It should be thick enough to coat the cauliflower but still pourable.

      Coat the Cauliflower: Dip each cauliflower floret into the batter, making sure to coat it evenly. Shake off any excess batter. Place the coated florets on a plate while you preheat your air fryer.

        Preheat the Air Fryer: Set your air fryer to 375°F (190°C) and allow it to preheat for about 5 minutes.

          Cook the Cauliflower: Lightly spray the air fryer basket with cooking oil. Arrange the cauliflower florets in a single layer in the basket (you may need to do this in batches). If desired, lightly drizzle olive oil over the florets for extra crispiness.

            Air Fry: Cook the cauliflower for 15-20 minutes, shaking the basket halfway through to ensure even cooking. The florets should be golden brown and crispy.

              Toss in Buffalo Sauce: Once cooked, transfer the cauliflower to a large bowl and pour the buffalo sauce over the top. Toss to coat the florets evenly in the sauce.

                Final Air Fry: Return the coated cauliflower back to the air fryer and cook for an additional 5 minutes at 375°F (190°C) to allow the sauce to caramelize slightly.

                  Garnish and Serve: Once done, remove the cauliflower from the air fryer and garnish with freshly chopped parsley. Serve hot with celery sticks and blue cheese dressing on the side, if desired.
