Air Fryer Buffalo Chicken Bites

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1/2 cup all-purpose flour

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

2 large eggs, beaten

1 cup panko breadcrumbs

1/4 cup buffalo sauce (plus more for tossing)

1 tablespoon olive oil

Optional: chopped green onions or blue cheese for garnish

Instructions
 

Prepare the Chicken: In a large bowl, combine the chicken pieces with salt, pepper, garlic powder, onion powder, and paprika. Toss until evenly coated.

    Set up Dipping Stations: In one shallow dish, place the flour. In a second dish, add the beaten eggs. In a third dish, spread out the panko breadcrumbs.

      Coat the Chicken: Dredge each chicken piece first in the flour, shaking off any excess, then dip into the beaten eggs, and finally coat with panko breadcrumbs. Ensure each piece is well-coated for maximum crispiness.

        Preheat the Air Fryer: Set the air fryer to 400°F (200°C) and preheat for about 5 minutes.

          Arrange in the Air Fryer: Lightly spray the air fryer basket with olive oil to prevent sticking. Place the chicken bites in a single layer, making sure they don’t touch each other for even cooking.

            Air Fry the Chicken: Cook the chicken bites for 10-12 minutes, shaking the basket halfway through for even cooking. When they are golden brown and crispy, they're ready!

              Toss in Buffalo Sauce: Once cooked, remove the chicken bites from the air fryer and place them in a clean bowl. Drizzle the buffalo sauce over them and toss gently to coat.

                Serve: Transfer the buffalo chicken bites to a serving platter, garnish with chopped green onions or crumbled blue cheese if desired, and serve immediately with your favorite dipping sauce!
