1 medium head of cauliflower, cut into florets

1 cup all-purpose flour (or gluten-free flour)

1 cup buttermilk (or plant-based milk mixed with 1 tbsp lemon juice)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for heat preference)

Salt and pepper, to taste

1 cup buffalo sauce (store-bought or homemade)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

1/4 cup blue cheese or ranch dressing (for serving)

Instructions
 

Prepare the Cauliflower: Wash and cut the cauliflower into bite-sized florets. Pat dry to ensure the batter sticks well.

    Make the Batter: In a large bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Slowly add in the buttermilk while stirring until you achieve a smooth batter.

      Coat the Cauliflower: Dip each cauliflower floret into the batter, making sure it's well-coated. You can use a fork to lift them out and shake off excess batter.

        Preheat the Air Fryer: Set your air fryer to 375°F (190°C) and preheat for about 5 minutes.

          Air Fry the Bites: Lightly coat the air fryer basket with olive oil spray. Place the battered cauliflower bites in a single layer in the basket. If necessary, do this in batches to avoid overcrowding.

            Cooking Time: Air fry the cauliflower for 10-12 minutes, shaking the basket halfway through cooking, until they're golden brown and crispy.
