Ingredients
  

1 lb pork tenderloin

1 cup fresh or frozen cranberries

1/2 cup orange juice (freshly squeezed for best flavor)

2 tablespoons brown sugar

2 tablespoons Dijon mustard

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

Zest of 1 orange

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Pork:

    In a bowl, combine the orange juice, brown sugar, Dijon mustard, minced garlic, thyme, salt, and black pepper. Whisk until well mixed. Place the pork tenderloin in a resealable plastic bag, pour the marinade over it, seal the bag, and massage it to coat the meat. Refrigerate for at least 1 hour (or up to overnight).

      Prepare the Cranberry Sauce:

        In a small saucepan over medium heat, combine the cranberries, olive oil, orange zest, and remaining marinade from the bag. Cook for about 10-15 minutes, stirring occasionally, until the cranberries burst and the sauce thickens. Set aside to cool slightly.

          Preheat the Air Fryer:

            Preheat your air fryer to 400°F (200°C) for about 5 minutes.

              Air Fry the Pork:

                Remove the pork tenderloin from the marinade and discard the marinade. Pat the meat dry with paper towels. Place the pork tenderloin in the air fryer basket and lightly brush it with olive oil. Cook at 400°F (200°C) for 20-25 minutes, flipping halfway through, until the internal temperature reaches 145°F (63°C) and the exterior is golden brown.

                  Glaze with Sauce:

                    About 5 minutes before the pork is done, brush the cranberry sauce over the pork tenderloin to create a caramelized glaze.

                      Rest and Serve:

                        Once done, remove the pork from the air fryer and let it rest for about 5 minutes. Slice the tenderloin into medallions, drizzle with additional cranberry sauce, and garnish with freshly chopped parsley.
