1 medium eggplant, sliced into ½-inch rounds

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably Italian seasoned)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried oregano

½ teaspoon salt

½ teaspoon black pepper

1 cup marinara sauce

1 cup shredded mozzarella cheese

Fresh basil leaves, for garnish

Optional: Olive oil spray

Instructions
 

Prepare the Eggplant:

    - Place the eggplant rounds in a colander, sprinkle with salt, and let them sit for about 30 minutes. This process will help remove excess moisture and bitterness.

      Set Up Your Breading Station:

        - In three separate shallow bowls, set up your breading station: one with flour, one with whisked eggs, and the last with a mixture of breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper.

          Bread the Eggplant:

            - Rinse the salted eggplant rounds under cold water and pat dry with paper towels.

              - Dip each round first in the flour, then in the eggs, and finally coat them in the breadcrumb mixture, pressing gently to adhere.

                Preheat the Air Fryer:

                  - Preheat your air fryer to 375°F (190°C) for about 5 minutes.

                    Air Fry the Eggplant:

                      - If desired, lightly spray the air fryer basket with olive oil.

                        - Place the breaded eggplant rounds in a single layer in the basket, making sure they do not touch. You may need to do this in batches.

                          - Air fry for about 10-12 minutes, flipping halfway through, until golden brown and crispy.
