2 cups cooked macaroni pasta

1 cup sharp cheddar cheese, shredded

1/2 cup pepper jack cheese, shredded

1/2 cup cream cheese, softened

1/2 cup cooked ground beef or turkey (seasoned with taco seasoning)

1/4 cup sour cream

1/4 cup salsa

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon chili powder (optional)

Salt and pepper to taste

1 cup breadcrumbs (panko preferred for extra crunch)

2 large eggs, beaten

Prepare the Mac and Cheese Mixture: In a large mixing bowl, combine the cooked macaroni, shredded cheddar cheese, pepper jack cheese, cream cheese, ground meat, sour cream, salsa, garlic powder, onion powder, chili powder, salt, and pepper. Mix well until all ingredients are evenly combined.

    Form the Balls: Using your hands, take a small portion of the mixture (about 1-2 tablespoons) and roll it into a ball. Repeat this step until all the mixture has been formed into balls, placing them on a parchment-lined baking sheet.

      Chill the Balls: Place the formed balls in the refrigerator for about 30 minutes. This helps them retain their shape during cooking.

        Set Up for Breading: Mix the breadcrumbs with a pinch of salt and pepper in a shallow dish. Beat the eggs in another shallow dish.
