1 cup cauliflower florets, finely chopped

1 cup broccoli florets, finely chopped

1 cup carrots, grated

1/2 cup green bell pepper, finely diced

1/2 cup onion, finely diced

1 cup breadcrumbs (panko preferred for extra crunch)

1/2 cup grated Parmesan cheese

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper, to taste

Olive oil spray

Prepare the Vegetables: In a large mixing bowl, combine all the chopped veggies (cauliflower, broccoli, carrots, green bell pepper, and onion). Make sure they are finely chopped or grated for a better texture in the bites.

    Mix the Ingredients: Add breadcrumbs, Parmesan cheese, eggs, garlic powder, onion powder, paprika, salt, and pepper to the vegetable mixture. Stir until everything is well combined and the mixture holds together.

      Form the Bites: Using your hands, take small portions of the mixture and form them into bite-sized balls (about 1 inch in diameter). If the mixture seems too crumbly, you can add a little water or another egg to help bind it.

        Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

          Prep for Cooking: Lightly spray the air fryer basket with olive oil to prevent sticking. Arrange the veggie bites in a single layer in the basket while making sure they are not touching each other. You may need to cook them in batches, depending on the size of your air fryer.

            Air Fry the Bites: Air fry at 375°F (190°C) for 10-12 minutes, flipping the bites halfway through. They should be golden brown and crispy on the outside.

              Serve and Enjoy: Once cooked, remove the bites from the air fryer and let them cool slightly. Serve them warm with your favorite dipping sauce or simply enjoy them as is!
