4 boneless, skinless chicken breasts

1 cup apple cider (not vinegar)

2 tablespoons olive oil

1 medium onion, thinly sliced

2 cloves garlic, minced

2 medium apples, cored and sliced (preferably Granny Smith or Honeycrisp)

1 teaspoon ground cinnamon

1 teaspoon dried thyme

1 tablespoon Dijon mustard

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (for garnish)

Optional: 1/2 cup chicken broth for extra sauce

Instructions
 

Prepare the chicken: Season both sides of the chicken breasts with salt and pepper.

    Sear the chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear for about 5-7 minutes per side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté onions and garlic: In the same skillet, add the sliced onion and cook for about 3-4 minutes until they start to soften. Add the minced garlic and sauté for another minute until fragrant.

        Add apples and spices: Stir in the sliced apples, ground cinnamon, and dried thyme. Cook for 2-3 minutes until the apples start to soften.

          Deglaze with cider: Pour in the apple cider (and chicken broth, if using), scraping up any browned bits from the bottom of the skillet. Add the Dijon mustard and mix well.

            Return the chicken: Place the seared chicken breasts back into the skillet, nestling them among the apples and onions. Reduce the heat to low and cover the skillet. Simmer for about 10-15 minutes, allowing the flavors to meld and the sauce to thicken slightly.

              Finish and serve: Remove the skillet from the heat. Sprinkle with fresh parsley before serving warm. This dish pairs wonderfully with mashed potatoes or a side salad.
