1 cup apple cider

2 cups all-purpose flour

1/2 cup granulated sugar

2 tsp baking powder

1/2 tsp baking soda

1/4 tsp ground nutmeg

1/4 tsp salt

2 large eggs

1/4 cup unsalted butter, melted

1/2 cup buttermilk

1 tsp vanilla extract

2 tbsp apple cider

1/4 tsp cinnamon

    Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

      Mix Wet Ingredients: In another bowl, beat the eggs, then add the melted butter, buttermilk, vanilla extract, and the cooled apple cider reduction. Mix until fully combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients, and stir gently until just combined. Be careful not to overmix; a few lumps are okay.
