Apple Cinnamon Oat Bars

2 cups rolled oats

1 cup unsweetened applesauce

1 cup diced apples (peeled and cored)

1/2 cup almond butter (or peanut butter)

1/3 cup maple syrup or honey

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 cup chopped walnuts or pecans (optional)

1/4 cup raisins or dried cranberries (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Mix Wet Ingredients: In a large mixing bowl, combine the applesauce, almond butter, maple syrup, and vanilla extract. Stir well until the mixture is smooth and well incorporated.

      Combine Dry Ingredients: In another bowl, whisk together the rolled oats, ground cinnamon, baking powder, and salt. If you're using nuts and dried fruit, add them to this mixture and stir until evenly mixed.

        Combine Both Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until all the oats are well coated and the ingredients are evenly distributed.

          Add Diced Apples: Gently fold in the diced apples, ensuring they are evenly spread throughout the mixture.

            Transfer to Baking Pan: Pour the mixture into the prepared baking pan and spread it evenly, pressing it down firmly with the back of a spatula to ensure it holds together during baking.
