Apple Cinnamon Oatmeal Bake

2 cups rolled oats

1 ½ cups milk (dairy or non-dairy)

2 large eggs

1/3 cup maple syrup (or honey)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ teaspoon nutmeg (optional)

½ teaspoon baking powder

½ teaspoon salt

2 medium apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

1 cup chopped walnuts or pecans (optional)

½ cup raisins or dried cranberries (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish or a similarly sized casserole dish.

    Combine Wet Ingredients: In a large mixing bowl, whisk together the milk, eggs, maple syrup, vanilla extract, and melted coconut oil (or another neutral oil if preferred).

      Mix Dry Ingredients: In another bowl, combine the rolled oats, ground cinnamon, nutmeg (if using), baking powder, and salt. Mix well to ensure the baking powder is evenly distributed.

        Combine Mixtures: Gradually add the dry mixture into the wet mixture, stirring until fully combined. Make sure there are no dry spots left.

          Fold in Apples and Nuts: Gently fold the diced apples, and if using, the walnuts or pecans and raisins or dried cranberries into the oatmeal mixture.

            Transfer to Baking Dish: Pour the oatmeal mixture into the prepared baking dish and spread it evenly with a spatula.

              Bake: Bake in the preheated oven for 35-45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

                Cool and Serve: Allow the oatmeal bake to cool for about 10 minutes before slicing. Serve warm, drizzled with extra maple syrup or a dollop of yogurt, if desired.
