Ingredients

1 cup rolled oats

1/2 cup almond butter (or any nut/seed butter of your choice)

1/2 cup dried apples, chopped

1/4 cup honey or maple syrup

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon vanilla extract

1/4 cup chopped walnuts or pecans (optional)

A pinch of salt

Instructions

Prepare the Ingredients: Start by chopping the dried apples into smaller pieces if they are not already diced. This will help in achieving a uniform texture in the energy balls.

Mix the Base: In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), cinnamon, nutmeg, vanilla extract, and salt. Stir until the mixture is well combined and sticky.

Add Apples and Nuts: Fold in the chopped dried apples and walnuts (or pecans) if using. Mix until the apples and nuts are evenly distributed throughout the mixture.

Form the Balls: Using your hands, scoop out small portions of the mixture (about 1 tablespoon each) and roll them into balls. If the mixture is too sticky, dampen your hands with a little water or olive oil to make rolling easier.

Chill: Place the energy balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.

Store: Once they’re set, transfer your Apple Pie Energy Balls to an airtight container. They can be stored in the fridge for up to a week or in the freezer for longer-lasting energy snacks.

Prep Time: 15 minutes | Total Time: 45 minutes (including chilling) | Servings: About 12-15 balls
