Ingredients

1 cup rolled oats

1 cup unsweetened almond milk (or any milk of choice)

1 medium apple, diced (preferably a sweet variety like Honeycrisp or Fuji)

1 tablespoon maple syrup (or to taste)

1 teaspoon cinnamon

1/2 teaspoon vanilla extract

1/4 cup Greek yogurt (optional for creaminess)

2 tablespoons chopped walnuts (or pecans)

A pinch of nutmeg

Optional toppings: additional apple slices, a drizzle of almond butter, or more nuts

Instructions

In a medium-sized mixing bowl, combine the rolled oats, almond milk, maple syrup, cinnamon, vanilla extract, and nutmeg. Stir well until the oats are fully submerged in the liquid.

Fold in the diced apple and chopped walnuts, ensuring they are evenly distributed throughout the mixture.

If you're using Greek yogurt, stir it in at this point for a creamier texture.

Transfer the oat mixture into a container with a lid or an individual serving jar. This recipe can be divided into two jars for portion control.

Seal the container(s) and place them in the refrigerator. Allow the oats to soak overnight (or at least 4 hours) until they've absorbed the liquid and softened.

In the morning, give the oats a good stir. You can add more milk if you prefer a looser consistency.

Top with additional apple slices, a drizzle of almond butter, or a sprinkle of nuts for extra crunch, if desired.

Serve chilled, and enjoy your delicious Apple Pie Overnight Oats!
