Apricot Glazed Baked Chicken

4 boneless, skinless chicken breasts

Salt and pepper, to taste

1 tablespoon olive oil

1 cup apricot preserves

2 tablespoons soy sauce

1 tablespoon Dijon mustard

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon lemon juice

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

¼ teaspoon red pepper flakes (optional for a kick)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken: Pat the chicken breasts dry with paper towels and season both sides with salt and pepper.

      Sear the Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and sear for about 3-4 minutes on each side, until golden brown. Remove the chicken from the skillet and set aside.

        Make the Apricot Glaze: In the same skillet, lower the heat to medium. Add the apricot preserves, soy sauce, Dijon mustard, minced garlic, grated ginger, lemon juice, thyme, and red pepper flakes (if using). Stir well and cook for about 2-3 minutes until the mixture is well combined and slightly bubbly.

          Combine Chicken and Glaze: Return the seared chicken breasts to the skillet with the apricot glaze. Spoon the glaze over the chicken to coat it evenly.
