This easy recipe combines crispy bacon, fresh tomatoes, and creamy avocado, all wrapped in whole wheat or spinach tortillas for a nutritious meal. 4 large whole wheat or spinach tortillas

1 large ripe avocado, mashed

8 slices of crispy cooked bacon

2 cups fresh baby spinach leaves

1 medium tomato, sliced

1/2 cup mayonnaise (or vegan alternative)

1 tablespoon lemon juice

Salt and pepper to taste

Optional: sliced jalapeños for heat

Instructions
 

In a small bowl, mix the mayonnaise with lemon juice, salt, and pepper to create a tangy spread. Adjust seasoning to taste.

    Lay out the tortillas on a clean surface. Spread a generous layer of the lemony mayo on each tortilla, leaving about an inch around the edges.

      Evenly divide the mashed avocado among the tortillas, spreading it over the mayo layer.

        On top of the avocado, layer the crispy bacon slices, fresh spinach, and tomato slices evenly across each tortilla.

          If desired, add sliced jalapeños for an extra kick.

            Carefully roll each tortilla tightly from one side to another, making sure to tuck in the fillings as you go.

              Once wrapped, slice each wrap in half diagonally and secure with toothpicks if necessary.

                Optional: Serve with a side of chips or fresh fruit for a delightful crunch!
