6 large eggs

1 ripe avocado

2 tablespoons mayonnaise

1 teaspoon Dijon mustard

1 teaspoon fresh lime juice

Salt and black pepper, to taste

2 tablespoons cooked bacon, finely crumbled

1 tablespoon fresh cilantro, chopped (optional, for garnish)

Paprika, for garnish

Hard Boil the Eggs: Place the eggs in a saucepan and cover them with cold water. Bring to a boil over medium-high heat. Once boiling, cover the pan, remove from heat, and let sit for 12 minutes.

    Cool the Eggs: After 12 minutes, transfer the eggs to an ice bath (a bowl of ice water). Let them cool for about 5-10 minutes, then peel the eggs under running water for easier peeling.

      Prepare the Filling: Slice the peeled eggs in half lengthwise and carefully remove the yolks. Place the yolks in a mixing bowl and set the egg white halves aside.

        Mash and Mix: Add the ripe avocado, mayonnaise, Dijon mustard, lime juice, salt, and pepper to the bowl with the yolks. Mash everything together until smooth and creamy.
