3 cloves garlic, minced

1 cup bell peppers (red, yellow, or green), diced

1 cup zucchini, diced

1 cup cherry tomatoes, halved

1 teaspoon Italian seasoning

½ teaspoon paprika

Salt and pepper to taste

1 cup chicken broth

1 cup cooked rice or quinoa

Fresh basil or parsley for garnish

Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken, season with salt, pepper, and paprika, and cook until golden brown and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
