4 boneless, skinless chicken breasts

8 slices of bacon

1 cup mozzarella cheese, shredded

1/2 cup spinach, chopped (fresh or thawed if frozen)

1/4 cup sun-dried tomatoes, chopped

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

Toothpicks or kitchen twine for securing

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Chicken Breasts: Place the chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to pound them to an even thickness, about 1/2 inch thick.

      Make the Filling: In a medium bowl, combine the shredded mozzarella, chopped spinach, sun-dried tomatoes, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.

        Stuff the Chicken: Take a chicken breast and place a generous amount of the cheese mixture in the center. Fold the chicken over the filling and secure it with toothpicks or tie it with kitchen twine. Repeat for the remaining chicken breasts.

          Wrap with Bacon: Take two slices of bacon and wrap them around each stuffed chicken breast. Ensure the bacon covers the chicken evenly, tucking the ends underneath if necessary.

            Sear the Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, carefully add the bacon-wrapped chicken breasts. Sear for about 3-4 minutes on each side, until the bacon is nicely browned.

              Bake the Chicken: Transfer the skillet to the preheated oven. Bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C) and the bacon is crispy.

                Rest and Serve: Remove the skillet from the oven and let the chicken rest for about 5 minutes. Carefully remove the toothpicks or twine before serving.
