Baked Apple Cider Donuts

1 cup apple cider

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ tsp ground nutmeg

½ cup granulated sugar

¼ cup brown sugar, packed

2 large eggs

½ cup unsweetened applesauce

¼ cup milk

¼ cup unsalted butter, melted

1 tsp vanilla extract

Cinnamon-sugar mixture (for coating): ½ cup granulated sugar + 2 tsp ground cinnamon

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a donut pan with cooking spray or a light layer of oil to prevent sticking.

    Simmer Apple Cider: In a small saucepan, bring the apple cider to a boil over medium heat. Reduce to a simmer and let it cook for about 15-20 minutes, or until it reduces to about ½ cup. Set aside to cool slightly.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

        Combine sugars: In another bowl, whisk together the granulated sugar, brown sugar, eggs, applesauce, milk, melted butter, vanilla extract, and the reduced apple cider until well combined.

          Combine mixtures: Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.

            Fill Donut Pan: Transfer the batter into a piping bag or a zip-top bag with a corner snipped off. Pipe the batter into the prepared donut pan, filling each cavity about ¾ full.

              Bake: Bake in the preheated oven for 12-15 minutes, or until the donuts are golden and a toothpick inserted into the center comes out clean.

                Cool & Coat: Let the donuts cool in the pan for about 5 minutes, then carefully transfer them to a cooling rack. While still warm, roll the donuts in the cinnamon-sugar mixture until fully coated.
