For the Meatballs:

1 lb ground beef or turkey

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

1 large egg

2 cloves garlic, minced

1 tsp onion powder

1 tsp salt

1/2 tsp black pepper

1/2 tsp dried oregano

For the Balsamic Vinaigrette:

1/2 cup balsamic vinegar

1/4 cup olive oil

2 tsp honey or maple syrup

1 tsp Dijon mustard

1 clove garlic, minced

1/4 tsp salt

1/4 tsp black pepper

Optional: Fresh herbs (basil or thyme) for garnish

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Meatball Mixture: In a large mixing bowl, combine the ground beef (or turkey), breadcrumbs, Parmesan cheese, chopped parsley, egg, minced garlic, onion powder, salt, black pepper, and oregano. Mix well until fully combined.

      Shape the Meatballs: Using your hands, form the mixture into 1-inch meatballs and place them evenly spaced on the prepared baking sheet.

        Bake the Meatballs: Bake the meatballs in the preheated oven for 15-20 minutes, or until they’re golden brown and cooked through (internal temperature should reach 160°F or 70°C).

          Prepare the Balsamic Vinaigrette: While the meatballs are baking, whisk together the balsamic vinegar, olive oil, honey or maple syrup, Dijon mustard, minced garlic, salt, and black pepper in a small bowl until well combined.
