Baked Creamy Tomato Basil Chicken

4 boneless, skinless chicken breasts

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1 cup cherry tomatoes, halved

3 cloves garlic, minced

1 cup heavy cream

1 teaspoon dried basil (or 2 tablespoons fresh basil, chopped)

1 teaspoon Italian seasoning

1/2 cup grated Parmesan cheese

1/4 cup fresh basil, chopped (for garnish)

1 cup spinach leaves (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Chicken: Season the chicken breasts with salt and pepper on both sides.

      Sear Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 5 minutes on each side, until golden brown. Remove the chicken from the skillet and set aside.

        Cook Tomatoes and Garlic: In the same skillet, add the cherry tomatoes and garlic. Cook for 2-3 minutes until the tomatoes start to soften and release their juices.

          Make Cream Sauce: Lower the heat and add the heavy cream, dried basil, Italian seasoning, and Parmesan cheese to the skillet. Stir well to combine, allowing the sauce to simmer for about 2-3 minutes until it thickens slightly.

            Combine Chicken and Sauce: Return the seared chicken breasts to the skillet, and if desired, add the spinach leaves on top. Spoon some of the creamy tomato sauce over the chicken.

              Bake: Transfer the skillet to the preheated oven and bake for 25-30 minutes, until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
