Ingredients

1 pound ground beef (or a mix of ground beef and pork)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup finely chopped onion

2 cloves garlic, minced

1 large egg

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried thyme

1/2 teaspoon smoked paprika

1 cup fig jam

2 tablespoons balsamic vinegar

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Meat Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, chopped onion, minced garlic, egg, salt, pepper, thyme, and smoked paprika. Mix until all ingredients are well incorporated, but do not overmix.

Form Meatballs: Using your hands, shape the mixture into 1.5-inch meatballs and arrange them on the prepared baking sheet, leaving space between each one for even cooking.

Make the Sauce: In a small bowl, mix the fig jam and balsamic vinegar until well blended.

Bake the Meatballs: Bake the meatballs in the preheated oven for about 20 minutes, until they are cooked through and lightly browned.

Glaze the Meatballs: Remove the meatballs from the oven and carefully brush them with the fig jam glaze. Return the meatballs to the oven and bake for an additional 5-7 minutes, allowing the glaze to caramelize slightly.

Serve: Once done, remove the meatballs from the oven, drizzle with any remaining glaze, and garnish with fresh chopped parsley. Serve warm with crusty bread or over pasta for a delightful meal!
