Cornbread's history is as rich as its flavor. First introduced to European settlers by Native Americans, cornbread quickly became a staple due to its ease of preparation and the availability of cornmeal. Over the years, it has taken on various forms, with each region of the United States putting its own spin on this beloved dish. Southern cornbread is often made with buttermilk and has a slightly crumbly texture, while Northern varieties might include more sugar for added sweetness. Ingredients

For the Cornbread Tenders:

1 cup yellow cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 egg

1 cup buttermilk

1/4 cup melted butter

1/4 cup honey

For the Honey Butter Glaze:

1/4 cup unsalted butter, softened

1/4 cup honey

1/2 teaspoon ground cinnamon (optional)

Pinch of salt

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a medium baking dish or line it with parchment paper for easy removal.

Mix Dry Ingredients: In a large bowl, whisk together the cornmeal, flour, baking powder, and salt until well combined.

Combine Wet Ingredients: In a separate bowl, beat the egg. Then, add the buttermilk, melted butter, and honey. Whisk until smooth.

Combine Mixtures: Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined. Make sure not to overmix; a few lumps are okay.

Cut into Tenders: Spread the batter evenly in the prepared baking dish. Use a knife to score the batter into tenders, making them about 1-inch wide.

Bake the Cornbread Tenders: Bake in the preheated oven for 20-25 minutes or until golden brown and a toothpick inserted in the center comes out clean.

Prepare Honey Butter Glaze: While the cornbread is baking, combine the softened butter, honey, cinnamon (if using), and a pinch of salt in a small bowl. Mix until smooth and well blended.

Glaze the Tenders: Once the cornbread is finished baking, remove it from the oven and immediately brush the honey butter glaze generously over the warm tenders.

Cool and Serve: Allow the cornbread tenders to cool slightly in the baking dish before cutting them along the scored lines. Serve warm with additional honey butter if desired.
