Balsamic Glazed Caprese Chicken

4 boneless, skinless chicken breasts

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), drained

1/4 cup fresh basil leaves, torn

1/2 cup balsamic vinegar

2 tablespoons honey

2 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper, to taste

1 teaspoon Italian seasoning (optional)

Prepare the Balsamic Glaze: In a small saucepan, combine balsamic vinegar and honey over medium heat. Bring to a gentle simmer and let it reduce until slightly thickened, about 10-15 minutes. Stir occasionally and set aside to cool slightly.

    Season the Chicken: While the glaze is reducing, season the chicken breasts with salt, pepper, and Italian seasoning (if using).

      Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for 6-7 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside.

        Create the Caprese Mixture: In the same skillet, add garlic and sauté for about 30 seconds until fragrant. Add the halved cherry tomatoes and cook for 2-3 minutes until they soften slightly.

          Add Cheese and Basil: Reduce the heat to low, then stir in the mozzarella balls and torn basil. Cook just until the mozzarella starts to soften, about 1-2 minutes.

            Combine and Glaze: Return the cooked chicken to the skillet, spooning the tomato, mozzarella, and basil mixture over the top. Drizzle the balsamic glaze over everything, letting the flavors meld together for another minute.
