Balsamic Grilled Portobello Burgers

4 large portobello mushrooms, stems removed

1/4 cup balsamic vinegar

2 tablespoons olive oil

2 tablespoons soy sauce

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

4 whole grain burger buns

4 slices fresh mozzarella cheese

1 cup fresh arugula

1 large tomato, sliced

Optional: avocado slices and pesto for added flavor

Instructions
 

Marinate the Mushrooms: In a medium bowl, whisk together balsamic vinegar, olive oil, soy sauce, minced garlic, oregano, thyme, salt, and pepper. Place the portobello mushrooms in the marinade, ensuring they are evenly coated. Cover and let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator for deeper flavor.

    Preheat the Grill: Preheat your grill to medium-high heat (about 400°F or 200°C). You can also use a grill pan on the stove if a grill is not available.

      Grill the Mushrooms: Remove the mushrooms from the marinade and shake off any excess liquid. Place them on the preheated grill, stem side down. Grill for about 5-7 minutes on each side, until they are tender and have nice grill marks. In the last minute of grilling, add a slice of mozzarella cheese on top of each mushroom to melt.

        Prepare the Buns: While the mushrooms are grilling, you can toast the burger buns on the grill or in a toaster until golden brown.

          Assemble the Burgers: Place the grilled portobello mushrooms with melted mozzarella on the bottom half of each toasted bun. Top with fresh arugula, a slice of tomato, and any additional toppings you desire, such as avocado or pesto. Finally, place the top half of the bun on each burger.
