2 ripe bananas, mashed

1 cup rolled oats

1/2 cup mixed berries (fresh or frozen, such as blueberries, raspberries, and strawberries)

1/4 cup sunflower seeds or chopped nuts (optional)

1/4 cup honey or maple syrup

1 tsp vanilla extract

1/2 tsp cinnamon

1/4 tsp salt

1/4 cup almond meal (or any nut flour)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

    Combine Wet Ingredients: In a large mixing bowl, combine the mashed bananas, honey (or maple syrup), and vanilla extract. Use a fork to mix until smooth.

      Add Dry Ingredients: Stir in the rolled oats, almond meal, cinnamon, and salt into the banana mixture. Mix until well incorporated.

        Fold in Berries and Seeds: Gently fold in the mixed berries and sunflower seeds (or nuts if using) until evenly distributed throughout the batter.

          Form Bites: Using your hands or a cookie scoop, form the mixture into small bite-sized balls or patties, placing them on the prepared baking sheet. Make sure to space them out appropriately as they will expand slightly during baking.

            Bake: Bake in the preheated oven for 15-20 minutes, or until the bites are golden brown and firm to the touch.

              Cool Down: Remove from the oven and allow the bites to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
