Basil Pesto Pasta

Ingredients
  

2 cups fresh basil leaves

1/2 cup grated Parmesan cheese

1/3 cup pine nuts (lightly toasted)

2 garlic cloves, minced

1/2 cup extra virgin olive oil

Salt and pepper to taste

12 oz pasta of choice (spaghetti, linguine, or penne)

Optional: 1/4 teaspoon red pepper flakes (for a hint of spice)

Optional: cherry tomatoes, halved (for garnish)

Instructions
 

Prepare the Pasta: In a large pot, bring salted water to a rolling boil. Add pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Make the Pesto: In a food processor, combine the fresh basil leaves, toasted pine nuts, grated Parmesan cheese, and minced garlic. Pulse until the ingredients are finely chopped.

      Add Olive Oil: While the processor is running, slowly drizzle in the extra virgin olive oil until the mixture is well combined and smooth. Scrape down the sides as needed. Add salt, pepper, and red pepper flakes (if using) to taste.

        Combine Pasta and Pesto: In a large mixing bowl, combine the hot pasta with the pesto. If the mixture is too thick, add reserved pasta water a little at a time until you reach your desired consistency.
