Basil Pesto Pasta Salad

2 cups of fusilli pasta (or any pasta of your choice)

1 cup fresh basil leaves, packed

1/4 cup pine nuts (or walnuts for a different flavor)

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 cup extra virgin olive oil

1 teaspoon lemon juice (freshly squeezed)

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1/2 red onion, thinly sliced

1 cup mozzarella balls (bocconcini), halved or diced

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fusilli pasta and cook according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.

    Make the Pesto: In a food processor, combine the fresh basil leaves, pine nuts, grated Parmesan cheese, minced garlic, lemon juice, salt, and pepper. Pulse until finely chopped. While the food processor is running, slowly drizzle in the olive oil until the mixture is smooth and creamy. Taste and adjust seasoning if necessary.

      Combine Ingredients: In a large bowl, add the cooked pasta, cherry tomatoes, diced cucumber, red onion, and mozzarella balls. Pour the basil pesto over the combined ingredients and gently toss until everything is well coated with the pesto.
