BBQ Chicken Flatbread with Red Onion & Mozzarella

1 lb boneless, skinless chicken breasts

1 cup BBQ sauce (your choice)

4 flatbreads or naan

1 cup shredded mozzarella cheese

1 medium red onion, thinly sliced

1 cup fresh cilantro, chopped (optional)

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon smoked paprika (optional)

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt, pepper, garlic powder, and smoked paprika. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken and cook until golden brown and cooked through, about 6-7 minutes per side. Remove from the skillet and let rest for a few minutes.

    Shred the Chicken: Once cooled, shred the chicken using two forks or chop it into bite-sized pieces. In a mixing bowl, combine the shredded chicken with BBQ sauce, ensuring it's well-coated.

      Preheat Oven: Preheat your oven to 450°F (230°C).

        Assemble the Flatbreads: Place the flatbreads on a baking sheet. Drizzle the remaining olive oil over each flatbread. Evenly distribute the BBQ chicken mixture on top of each flatbread. Add the thinly sliced red onions, spreading them out evenly. Finally, sprinkle the shredded mozzarella cheese on top.

          Bake: Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly and the edges of the flatbreads are golden brown.
