BBQ Chicken Quesadillas

Ingredients
  

2 cups cooked chicken, shredded (preferably rotisserie or grilled)

1 cup BBQ sauce (your favorite brand)

1 cup cheddar cheese, shredded

1 cup Monterey Jack cheese, shredded

1 small red onion, thinly sliced

1 cup corn kernels (fresh, frozen, or canned)

1/2 cup fresh cilantro, chopped

6 large flour tortillas

2 tablespoons olive oil (for cooking)

Salt and pepper to taste

Optional: Jalapeños for heat

Instructions
 

Prepare the Chicken Mixture:

    - In a bowl, mix the shredded chicken with BBQ sauce until well coated. Season with salt and pepper to taste.

      Assemble the Quesadillas:

        - Lay one tortilla flat on a clean surface. On one half of the tortilla, spread a layer of the BBQ chicken mixture.

          - On top of the chicken, add a sprinkle of cheddar and Monterey Jack cheese, followed by a layer of sliced red onion and corn kernels. Add jalapeños if desired.

            - Sprinkle a bit of fresh cilantro over the filling before folding the other half of the tortilla over to create a half-moon shape.

              Cook the Quesadillas:

                - Heat 1 tablespoon of olive oil in a large skillet over medium heat. Once hot, carefully add the prepared quesadilla to the skillet. Cook for about 3-4 minutes on each side or until the tortillas are golden brown and crispy, and the cheese is melted. Repeat the process for the remaining quesadillas, adding more oil if needed.

                  Slice and Serve:

                    - Once all quesadillas are cooked, transfer them to a cutting board. Let them cool for a minute, then cut into triangles.

                      - Serve hot with additional BBQ sauce, sour cream, or guacamole on the side for dipping.
