Ingredients

4 medium sweet potatoes

2 cups shredded cooked chicken (rotisserie chicken works great)

1 cup BBQ sauce (your favorite brand)

1/2 cup corn kernels (canned or frozen)

1/2 cup black beans, rinsed and drained

1 cup shredded cheddar cheese (or a dairy-free alternative)

1/2 cup chopped green onions

1/4 cup fresh cilantro, chopped (optional)

Olive oil, for drizzling

Salt and pepper, to taste

Optional toppings: sour cream or Greek yogurt

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Sweet Potatoes: Wash the sweet potatoes thoroughly and poke several holes in each potato with a fork. This will allow steam to escape while baking.

Bake the Sweet Potatoes: Place the sweet potatoes on a baking sheet. Drizzle them with a little olive oil and sprinkle with salt and pepper. Bake in the preheated oven for 45-50 minutes, or until they are tender when pierced with a fork.

Prepare the BBQ Chicken Filling: In a large mixing bowl, combine the shredded chicken, BBQ sauce, corn, and black beans. Mix well until everything is coated in the sauce.

Assemble the Stuffed Potatoes: Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Using a sharp knife, slice each potato lengthwise and gently fluff the insides with a fork.

Fill the Potatoes: Spoon the BBQ chicken mixture generously into each sweet potato, dividing it evenly among them.

Add Cheese: Top each stuffed sweet potato with shredded cheddar cheese. Put the stuffed potatoes back in the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Garnish and Serve: Remove the sweet potatoes from the oven and sprinkle with chopped green onions and cilantro if desired. Serve warm with optional toppings like sour cream or Greek yogurt.
