Ingredients

2 medium sweet potatoes, peeled and cut into 1-inch cubes

1 lb (450g) cooked shredded chicken (you can use rotisserie chicken for convenience)

1 cup BBQ sauce (your favorite brand or homemade)

1 cup shredded cheddar cheese

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

Fresh parsley, chopped (for garnish, optional)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Prepare Sweet Potatoes: In a large bowl, toss the sweet potato cubes with olive oil, garlic powder, smoked paprika, salt, and black pepper until evenly coated.

Roast Sweet Potatoes: Spread the sweet potato cubes on the prepared baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until tender and slightly caramelized, flipping once halfway through.

Mix Chicken and Sauce: While the sweet potatoes are roasting, combine the shredded chicken and BBQ sauce in a medium bowl, mixing well to ensure the chicken is fully coated.

Assemble the Bites: Once the sweet potatoes are done, remove them from the oven. Using a spoon, create a small indentation in the center of each sweet potato cube. Fill each indentation generously with the BBQ chicken mixture.

Add Cheese: Sprinkle cheddar cheese on top of each filled sweet potato bite.

Final Bake: Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Garnish and Serve: Remove from the oven and let cool slightly. Garnish with freshly chopped parsley if desired, then serve warm as an appetizer or main dish.
