4 medium zucchinis

2 cups shredded cooked chicken (rotisserie works great)

1 cup BBQ sauce (your choice of flavor)

1/2 cup corn kernels (canned or frozen)

1/2 cup black beans, rinsed and drained

1 red bell pepper, diced

1/2 cup red onion, finely chopped

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

2 tablespoons olive oil

Salt and pepper, to taste

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchinis: Wash the zucchinis, then slice them in half lengthwise. Using a spoon, scoop out a portion of the flesh to create a boat, leaving about 1/4 inch of zucchini to maintain structure. Reserve the scooped flesh for later.

      Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the red onion and bell pepper. Sauté for about 3-4 minutes until softened. Then, add the reserved zucchini flesh and cook for an additional 2 minutes. Season with salt and pepper.

        Mix the Filling: In a large bowl, combine the shredded chicken, BBQ sauce, sautéed vegetables, corn, black beans, and half of the shredded cheese. Mix well to incorporate all ingredients evenly.

          Fill the Zucchini Boats: Place the zucchini halves on a baking sheet lined with parchment paper. Generously fill each zucchini boat with the BBQ chicken mixture.

            Top with Cheese: Sprinkle the remaining shredded cheese evenly over the filled zucchini boats.

              Bake: Bake in the preheated oven for 25-30 minutes, or until the zucchinis are tender and the cheese is bubbly and golden.
