Ingredients

1 lb (450g) beef flank steak, thinly sliced against the grain

3 cups broccoli florets

1 red bell pepper, sliced thinly

3 cloves garlic, minced

1-inch piece of ginger, grated

1/4 cup low-sodium soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon vegetable oil

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon sugar

1/4 teaspoon black pepper

Cooked rice or quinoa, for serving

Instructions

Prep the Beef: In a medium bowl, combine the sliced flank steak with soy sauce, cornstarch, and black pepper. Mix well and let it marinate for about 10 minutes.

Prepare the Sauce: In another bowl, whisk together the oyster sauce, sesame oil, rice vinegar, and sugar until well combined. Set aside.

Cook the Vegetables: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add broccoli and bell pepper; stir-fry for about 3-4 minutes until they are tender-crisp. Add minced garlic and grated ginger, then stir-fry for another 30 seconds until fragrant. Remove vegetables from the pan and set them aside.

Stir-Fry the Beef: In the same skillet, add the marinated beef in a single layer. Let it sear without stirring for about 2 minutes to achieve a nice browning. Stir-fry for another 2-3 minutes until the beef is cooked through.

Combine Everything: Return the cooked vegetables to the skillet with the stir-fried beef. Pour the sauce over the mixture and stir well to combine. Cook for an additional 1-2 minutes until everything is heated through and the sauce thickens slightly.

Serve: Remove from heat and serve immediately over a bed of cooked rice or quinoa.
