Ingredients

2 medium sweet potatoes, peeled and cubed

1 can (15 oz) black beans, rinsed and drained

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 medium carrot, diced

1 cup vegetable broth

1 can (14.5 oz) diced tomatoes (with juices)

1 tsp ground cumin

1 tsp smoked paprika

½ tsp ground cinnamon

1 tsp chili powder (adjust to taste)

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro or parsley for garnish

Optional: Squeeze of lime juice

Instructions

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another 1-2 minutes, until fragrant.

Add Veggies: Add the diced red bell pepper and carrot to the pot. Sauté for about 5 minutes until they start to soften.

Incorporate Sweet Potatoes: Add the cubed sweet potatoes, mixing them in with the other vegetables. Cook for another 5 minutes, allowing the sweet potatoes to begin to soften.

Combine Ingredients: Stir in the black beans, diced tomatoes (with their juices), vegetable broth, ground cumin, smoked paprika, cinnamon, chili powder, salt, and pepper. Bring the mixture to a gentle boil.

Simmer Stew: Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 20-25 minutes, or until the sweet potatoes are tender and the flavors meld together.

Final Touches: Taste and adjust seasonings if necessary. If desired, add a squeeze of lime juice for brightness.

Serve: Ladle the stew into bowls and garnish with fresh cilantro or parsley. Serve hot, and enjoy your hearty meal!
