2 pounds pork tenderloin

1 cup fresh blackberries

1/2 cup balsamic vinegar

1/4 cup honey

2 tablespoons soy sauce

2 tablespoons Dijon mustard

1 tablespoon olive oil

4 garlic cloves, minced

1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

Fresh thyme sprigs for garnish (optional)

Prepare the Marinade: In a medium saucepan, combine blackberries, balsamic vinegar, honey, soy sauce, Dijon mustard, minced garlic, and thyme. Cook over medium heat, stirring occasionally, until the blackberries break down and the mixture thickens slightly (about 10-15 minutes).

    Marinate the Pork: Allow the blackberry balsamic sauce to cool slightly. Reserve 1/2 cup of the sauce for later use, then pour the remaining sauce over the pork tenderloin in a shallow dish or a resealable plastic bag. Marinate in the refrigerator for at least 1 hour or preferably overnight for maximum flavor.

      Preheat the Oven: Preheat your oven to 375°F (190°C).

        Sear the Pork: In a large oven-safe skillet, heat the olive oil over medium-high heat. Remove the pork from the marinade, allowing excess to drip off, and season with salt and pepper. Sear the pork tenderloin in the skillet for 3-4 minutes on each side, or until browned.
