2 medium zucchini (zoodles)

1 cup cooked shredded chicken (preferably buffalo-flavored)

1 cup heavy cream

1 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup buffalo sauce (plus more for drizzling)

Fresh parsley, chopped (for garnish)

Crumbled blue cheese (optional, for serving)

Prepare the Zoodles: Using a spiralizer, create zoodles from the zucchini. If you don’t have a spiralizer, you can use a vegetable peeler to create thin ribbons. Set aside.

    Make the Alfredo Sauce: In a large skillet, melt the butter over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant. Pour in the heavy cream, stirring constantly. Gradually add in the grated Parmesan cheese, whisking until the sauce thickens (about 5 minutes). Season with onion powder, smoked paprika, salt, and pepper.

      Combine Chicken and Sauce: Add the shredded buffalo chicken into the Alfredo sauce, and mix well to coat the chicken in the sauce. Let it simmer on low while you prepare the zoodles.

        Sauté the Zoodles: In a separate pan, lightly sauté the zoodles over medium heat for about 2-3 minutes, just until they begin to soften. Be careful not to overcook them to keep the zoodles crisp.
