Buffalo Chicken Egg Rolls

1 cup cooked shredded chicken (rotisserie works great)

1/2 cup buffalo sauce (adjust to taste)

1/4 cup cream cheese, softened

1/4 cup shredded cheddar cheese

1/4 cup chopped green onions

1 package of egg roll wrappers (about 20 wrappers)

Oil for frying (vegetable or canola)

Optional: ranch or blue cheese dressing for dipping

Prepare the Filling: In a mixing bowl, combine the shredded chicken, buffalo sauce, softened cream cheese, shredded cheddar cheese, and chopped green onions. Mix until thoroughly combined and set aside.

    Assemble the Egg Rolls: Lay one egg roll wrapper on a clean surface with a corner facing you (like a diamond). Place about 2-3 tablespoons of the chicken mixture in the center of the wrapper.

      Roll the Egg Rolls: Fold the bottom corner over the filling, then fold the sides towards the center, and roll tightly towards the top corner. Seal the edges with a little water or egg wash to prevent them from opening up during frying. Repeat with the remaining wrappers and filling.

        Heat the Oil: In a large skillet or deep fryer, heat about 2 inches of oil over medium-high heat until it reaches 350°F (175°C).
