1 lb (450g) boneless, skinless chicken breasts, diced

1 cup buffalo sauce (adjust to taste)

1 tbsp olive oil

1 tbsp apple cider vinegar

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

1 head of butter lettuce or romaine, leaves separated

1/2 cup shredded carrots

1/2 cup diced celery

1/4 cup crumbled blue cheese or feta (optional)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Cook the Chicken: In a large skillet over medium heat, add olive oil. Once hot, add the diced chicken. Season with salt, pepper, garlic powder, and onion powder. Cook for about 7-8 minutes, stirring occasionally, until the chicken is cooked through and no longer pink in the center.

    Add the Sauce: Reduce heat to low and pour the buffalo sauce and apple cider vinegar over the cooked chicken. Stir well to coat all the pieces of chicken. Allow it to simmer for an additional 2-3 minutes until the sauce slightly thickens.

      Prepare the Lettuce Wraps: While the chicken is simmering, carefully wash and separate the lettuce leaves. Pat them dry with a paper towel.

        Assemble the Wraps: Take a lettuce leaf and add a generous scoop of the buffalo chicken mixture in the center. Top with shredded carrots, diced celery, and crumbled blue cheese if using.

          Garnish and Serve: Sprinkle fresh cilantro or parsley over the filled lettuce wraps for an added burst of flavor and color. Repeat the process until all the chicken is used.
